We love Pét-Nats - to us, they are delicious, simple pleasures for sharing with friends in the sunshine, and nothing brings on a smile faster than a glass of bubbles.
Sangiovese is one of our favorite grape varieties but is rare in Aotearoa. It is well suited to this climate and site, and creates energetic wines with a lovely fruit expression and a light tannic edge. It makes a very refreshing, vibrant Pét Nat with fantastic colour and bursting with flavour.
The beautiful certified organic Sangiovese grapes that went into this bottle are grown by Andrew Colman at the Osawa Vineyard in the Mangatahi subregion of Te Matau a Māui. Mangatahi is situated on the southern alluvial river terraces of the Ngaruroro river. With a higher elevation than the Heretaunga plains, it is slightly cooler, with more influence from the Kaweka and Ruahine mountains to the west. The soils are sandy loam over alluvial gravels with ferrous content (referred to as “red metals” in Aotearoa).
We make our Pét-Nats by handpicking the grapes and pressing them like that (as whole bunches) at the winery. We then let the resulting juice ferment with its indigenous yeast in the tank. Then, after a succession of nervous predictions and, finally, with the actual level of sugar in the wine to get a bubbly bottle, we hand-bottle the sparkling wine just before the end of alcoholic ferment. The wine then finishes fermenting in bottle, creating a naturally sparkling, dry, slightly cloudy wine.
To make it slightly more complex (and slightly less cloudy and less explosive) than it might normally otherwise be, we hand-disgorge all our Pét-Nats. This gets rid of much of the lees (the leftovers from ferment) and we top each bottle with the same wine, creating a lightly-sparkling, almost clear and definitively non-explosive sparkling wine that bubbles away gently, but insistently, in the glass.
Hand-disgorged and hand-labelled, due to the high natural acidity you might be lucky enough to find some naturally occurring deposits in your wine.
Serve chilled.
